The story behind MatMerci

Paris should not be visited. It should be felt.

I'm Mathieu, storyteller, former chef and restaurant owner. My journey began in cinema, crafting historical narratives for French television. Years later, food became my language. I introduced the lobster roll to Paris with Lobster Bar, a project celebrated by Le Fooding and the Ritz Guide, and given an honorable mention for best restaurant by Travel + Leisure.

For more than twenty years, I've explored Paris beyond the surface: its hidden histories, its artisans, its revolutions, and the flavors that carry centuries of memory.

What I offer today is not a tour. It's a suspended moment, where taste becomes story, and history becomes personal.
